Cozy, chewy, and loaded with juicy plum filling, these Baked Plum Oat Bars are the perfect balance of sweet, tart, and crumbly. Great for breakfast, snacking, or dessert.

  • 1 ½ cups old-fashioned oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • ½ cup melted butter
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 cups diced plums
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add melted butter and stir until crumbly.
  3. Press two-thirds of the oat mixture into the bottom of the prepared pan, pressing it evenly.
  4. In another bowl, toss diced plums with granulated sugar, cornstarch, and vanilla extract.
  5. Spread the plum mixture over the crust in the pan, then sprinkle the remaining oat mixture on top.
  6. Bake for 35–40 minutes, until the top is golden brown and the fruit is bubbling.
  7. Let the bars cool completely in the pan before slicing and serving.
