Soft, creamy baked cornmeal custard squares with a lightly golden top and a smooth, comforting texture that feels nostalgic and satisfying.

Ingredients

Scale
  • 1 cup cornmeal
  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F and lightly grease an 8 x 8 inch baking dish.
  2. In a mixing bowl, whisk together the cornmeal, sugar, and salt until evenly combined.
  3. In another bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
  4. Slowly pour the wet mixture into the dry ingredients while whisking continuously to prevent lumps.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 45 to 50 minutes until the center is just set and the top is lightly golden.
  7. Remove from the oven and let cool completely before slicing into squares.

Notes

  • Allow the custard to cool fully for clean, even slices.
  • Use fine or medium cornmeal for the smoothest texture.
  • Serve chilled or at room temperature for best flavor.
