A creamy, comforting baked corn custard with a soft texture and lightly golden top, perfect as a cozy side dish or simple main.

Ingredients

  • 2 cups whole kernel corn, drained
  • 1 cup milk
  • 1/2 cup heavy cream
  • 3 large eggs
  • 2 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a medium baking dish.
  2. In a large bowl, whisk together milk, heavy cream, eggs, melted butter, sugar, salt, and black pepper until smooth.
  3. Pour the custard mixture into the prepared baking dish.
  4. Gently fold the corn into the mixture, distributing it evenly.
  5. Bake for 40 minutes until the top is lightly golden and the center is just set.
  6. Remove from the oven and let rest for 5 minutes before serving warm.

Notes

  • Do not overbake, the center should remain slightly soft.
  • Letting the custard rest helps it set properly.
  • Fresh or frozen corn can be used if well drained.
