A comforting oven baked dish made with fluffy millet, tender chicken, and colorful vegetables, gently spiced and perfect for an easy, nourishing meal.

Ingredients

  • 1 cup millet
  • 2 cups water
  • 1 pound boneless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 cup carrots, diced
  • 1 cup green peas
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F and lightly grease an oven safe baking dish.
  2. Rinse the millet thoroughly, then simmer it with the water for about 10 minutes until partially cooked.
  3. Spread the partially cooked millet evenly in the baking dish.
  4. In a bowl, combine chicken, olive oil, onion, garlic, carrots, peas, turmeric, cumin, salt, and black pepper.
  5. Layer the chicken and vegetable mixture evenly over the millet.
  6. Cover the dish and bake for 35 minutes.
  7. Uncover and bake for an additional 10 minutes until the chicken is fully cooked.
  8. Remove from the oven, sprinkle with fresh parsley, gently fluff, and serve warm.

Notes

  • Rinse millet well to improve flavor and texture.
  • Let the dish rest for a few minutes after baking before serving.
