Authentic Pambazos Recipe

Authentic Pambazos are a classic Mexican street food sandwich made with bread dipped in a guajillo chili sauce, filled with chorizo and potatoes, then pan-fried until crispy and topped with fresh garnishes.

Ingredients

Scale
  • 4 bolillo rolls or telera rolls
  • 3 dried guajillo chilies, seeded
  • 1 garlic clove
  • 1/2 cup water
  • Salt, to taste
  • 2 tbsp vegetable oil (for sauce)
  • 1 lb Mexican chorizo
  • 2 medium potatoes, peeled and diced
  • 2 tbsp vegetable oil (for frying)
  • Shredded lettuce, sour cream, and queso fresco for garnish
  • Sliced radishes and salsa for serving

Instructions

  1. Boil guajillo chilies in water for 5 minutes to soften. Blend with garlic, water, and salt into a smooth sauce. Strain if needed.
  2. In a skillet, heat 2 tbsp oil. Cook sauce for 3–4 minutes until slightly thickened. Set aside.
  3. In another skillet, cook diced potatoes until tender, then add chorizo and cook until browned. Mix well and keep warm.
  4. Slice bread rolls but do not separate completely. Dip each roll into the guajillo sauce to coat.
  5. In a skillet, heat 2 tbsp oil and pan-fry the dipped rolls until slightly crisp on both sides.
  6. Fill each roll with the chorizo-potato mixture.
  7. Top with shredded lettuce, sour cream, queso fresco, radishes, and salsa. Serve hot.

Notes

  • If you can’t find bolillo rolls, use soft sandwich rolls.
  • Add pickled jalapeños for extra heat.
  • Serve immediately to keep the bread crisp.
