Ingredients

  • Artichoke Hearts: 1 can (14 oz) or 2 cups fresh, chopped
  • All-Purpose Flour: 1 cup
  • Eggs: 2 large
  • Parmesan Cheese: ½ cup grated
  • Baking Powder: 1 teaspoon
  • Fresh Parsley: 2 tablespoons chopped
  • Salt: ½ teaspoon
  • Black Pepper: ¼ teaspoon
  • Goat Cheese: 4 oz
  • Lemon Juice: 1 tablespoon

Instructions

  1. Preheat Your Equipment: Heat the oil in a large frying pan over medium heat until it reaches 350°F (175°C).
  2. Combine Ingredients: In a mixing bowl, combine artichoke hearts, flour, eggs, parmesan cheese, baking powder, parsley, salt, and pepper. Stir until the mixture is fully combined.
  3. Prepare Your Cooking Vessel: Make sure the frying pan is hot and ready for frying. You can test by dropping a small spoonful of batter into the oil — if it sizzles, it’s time to fry.
  4. Assemble the Dish: Scoop spoonfuls of the batter and form small fritters. Gently drop them into the hot oil, taking care not to overcrowd the pan.
  5. Cook to Perfection: Fry the fritters for 3–4 minutes per side, or until golden brown and crispy.
