Warm, fluffy apple muffins filled with chunks of fresh apple and topped with a crunchy cinnamon sugar crust. These bakery-style treats are perfect for cozy mornings or an afternoon pick-me-up.

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup plain yogurt or sour cream
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and diced apples
  • Cinnamon sugar for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease lightly.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together brown sugar, granulated sugar, eggs, yogurt, oil, and vanilla until smooth.
  4. Pour the wet ingredients into the dry and gently fold until just combined. Do not overmix.
  5. Fold in the diced apples evenly throughout the batter.
  6. Spoon batter into muffin cups, filling almost to the top. Sprinkle cinnamon sugar on top if desired.
  7. Bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use tart apples like Granny Smith for the best flavor and texture.
  • Don’t overmix the batter to keep the muffins soft and fluffy.
  • Freeze extras individually wrapped for up to 3 months.
  • Add chopped nuts or raisins for variety.
