  • 2 cups rolled oats
  • 2 cups milk (dairy or plant-based)
  • 2 large eggs
  • 1/4 cup maple syrup
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced
  • 1/4 cup dried cranberries (optional)
  • 1 tablespoon butter or oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together milk, eggs, maple syrup, brown sugar, vanilla, cinnamon, nutmeg, and salt.
  3. Add in the oats and baking powder. Stir until fully combined.
  4. Fold in the diced apples and dried cranberries, if using.
  5. Pour the mixture into the greased baking dish and smooth out the top.
  6. Let the mixture rest for 5–10 minutes to allow the oats to absorb some liquid.
  7. Bake for 35–40 minutes or until the top is golden and center is set.
  8. Cool slightly before slicing. Serve warm with optional toppings.
