A crisp and colorful apple cheddar salad featuring juicy red apples, sharp cheddar, toasted pecans, dried cranberries, and a tangy maple vinaigrette. Perfect for any season and full of texture and flavor.

Ingredients

  • 5 cups mixed greens
  • 2 medium red apples, thinly sliced
  • 3 ounces sharp cheddar cheese, shaved or grated
  • 1/3 cup pecans, toasted
  • 1/4 cup dried cranberries
  • 1/4 small red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let cool.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper.
  3. In a large mixing bowl, add mixed greens, apple slices, red onion, cranberries, and cooled pecans.
  4. Drizzle the dressing over the salad and toss gently to coat evenly.
  5. Top with shaved cheddar cheese just before serving.
  6. Serve immediately and enjoy fresh.

Notes

  • Toss apple slices in lemon juice to prevent browning if prepping ahead.
  • Use freshly shredded cheddar for better flavor and texture.
  • Store dressing separately if making ahead.
