  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a saucepan, combine chopped dates and boiling water. Stir in baking soda and let sit for 10 minutes.
  3. In a mixing bowl, beat butter and brown sugar until creamy. Add eggs one at a time, then stir in vanilla.
  4. Mix in the softened date mixture.
  5. In a separate bowl, whisk together flour, baking powder, salt, and cinnamon. Add to the wet mixture and stir just until combined. Fold in walnuts if using.
  6. Pour batter into prepared dish and smooth the top.
  7. Bake for 35 to 40 minutes or until a toothpick inserted comes out clean.
  8. Let the cake cool for at least 20 minutes before slicing and serving.

  • Use Medjool dates for the richest flavor and softest texture.
  • Do not overmix the batter to keep the cake tender.
