Soft and lightly crisp almond honey cookies with golden edges and a tender center, naturally sweetened with honey and topped with a whole toasted almond for the perfect nutty finish.

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 24 whole almonds

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add honey, egg, and vanilla extract to the butter mixture and mix until smooth.
  5. Gradually add the dry ingredients into the wet mixture and mix until just combined.
  6. Scoop tablespoon sized portions of dough, roll into balls, and place onto the prepared baking sheet.
  7. Press one whole almond gently into the center of each dough ball.
  8. Bake for 12 to 15 minutes until the edges are lightly golden brown.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Chill the dough for 20 minutes if your kitchen is warm to prevent spreading.
  • Do not overbake, the cookies will continue to firm up as they cool.
  • Store in an airtight container at room temperature for up to 5 days.
  • Dough can be frozen in portions and baked with a few extra minutes added.
